📍 Based in Nicaragua, Sasha Noelle is a plant-forward chef, retreat consultant & mentor, and yoga & wellness guide with over a decade of experience working in wellness spaces in the tropics. Her work is a blend of nourishment, intention, and reverence for the natural world.
Culinarily trained under renowned chef Matthew Kenney, Sasha specializes in raw and vibrant cuisine, drawing inspiration from global traditions. She blends her artistry with wellness practices to create elevated dining experiences in private villas, retreats, and intimate events throughout Central America and southern Spain.
With over three years of experience working remotely for a global juice consultancy as a conceptual menu writer, Sasha has helped clients open plant-focused cafés and juice bars around the world—creating menus rooted in both market strategy, holistic nourishment and uncompromising quality and flavour.
A steward of the land, Sasha prioritizes fresh, seasonal ingredients sourced from local producers and the unique terroir. Each dish is crafted from scratch to be nutrient-dense, flavorful, and free from processed or refined products.
Sasha believes that to heal ourselves, we must begin by healing the soil. Her ethos blends beauty, sustainability, and wellness—offering food and experiences that truly nourish body, mind, and spirit.
🌿 Alongside her culinary path, Sasha is a seasoned yoga teacher and retreat mentor. She has been guiding students since 2008, with training and teaching spanning Canada, Mexico, The Bahamas, and Nicaragua, where she now lives and teaches.
Trained in vinyasa flow, yin, hatha, sivananda vedanta, ayurveda, usui reiki, and restorative practices—with a background in dance—Sasha’s classes are gentle yet strong, grounded in breath awareness, micro-muscle engagement, and intentional movement. Her teaching remains accessible, non-dogmatic,
and deeply rooted in presence.
From 2010 to 2016, Sasha co-founded and led Apoyo Lodge—Nicaragua’s first private retreat space exclusively offering healing raw plant-based cuisine and yoga, nestled in the serene Laguna de Apoyo. Today, it lives on as Villa Laguna.
